Studies have also shown that nutrients have also a modulating function in metabolism by means of which may even enable or disable genes in the postprandial State.

Pérez Jiménez has done research that shows for example, as the same amount of fat eaten for breakfast, produces different reactions of inflammation and blood oxidation during the day very different if that fat were butter or olive oil.
